  • 1 piece mini cucumber
  • 100 g cooked sushi rice
  • 10 ml rice vinegar
  • 2 teaspoon sugar
  • 1 pinch salt
  • 30 g smoked salmon slices
  • 30 g avocado slices
  • 20 g cream cheese spread
  • 15 ml soy sauce low sodium
  • 2 teaspoon wasabi paste

  1. Wash the mini cucumber and dry it with a clean towel.
  2. Using a vegetable peeler, slice the cucumber lengthwise into thin strips about 2 inches wide.
  3. In a small bowl, mix the cooked sushi rice with rice vinegar, sugar, and a pinch of salt until well combined.
  4. Lay one cucumber strip flat on a clean surface.
  5. Spread a thin layer of cream cheese evenly over the cucumber strip.
  6. Place a small amount of the sushi rice on top of the cream cheese, spreading it evenly but leaving about 1 cm at the edges.
  7. Add a few slices of smoked salmon and avocado on top of the rice.
  8. Carefully roll the cucumber strip tightly from one end to the other to form a mini sushi roll.
  9. Repeat the process with the remaining cucumber strips and ingredients.
  10. Cut each roll into bite-sized pieces using a sharp knife.
  11. Serve the mini cucumber sushi rolls with low sodium soy sauce and a small dab of wasabi paste on the side.
