- 150 g potato peeled and sliced
- 50 g blue cheese crumbled
- 10 g unsalted butter
- 20 g all purpose flour
- 100 ml whole milk
- 1 piece egg beaten
- 1 pinch salt
- 1 pinch black pepper ground
- 1 teaspoon fresh thyme leaves

- Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
- Butter a small pie dish with unsalted butter.
- Place the sliced potatoes in a pot of salted water and boil until just tender, about 8 minutes.
- Drain the potatoes and set aside.
- In a small saucepan, melt the unsalted butter over medium heat.
- Add the all purpose flour to the melted butter and stir continuously to form a roux, cooking for 1-2 minutes without browning.
- Gradually whisk in the whole milk to the roux, stirring constantly to avoid lumps, and cook until the sauce thickens.
- Remove the sauce from heat and stir in half of the crumbled blue cheese until melted and smooth.
- Season the sauce with salt, ground black pepper, and fresh thyme leaves.
- Layer half of the boiled potato slices in the bottom of the prepared pie dish.
- For half of the blue cheese sauce over the potato layer.
- Add the remaining potato slices on top.
- For the remaining blue cheese sauce over the top layer of potatoes.
- Sprinkle the remaining crumbled blue cheese evenly over the top.
- Brush the edges of the pie dish with the beaten egg to help browning.
- Bake the pie in the preheated oven for 25-30 minutes until the top is golden and bubbling.
- Remove from oven and let rest for 5 minutes before serving.
