  • 15 ml extra virgin olive oil
  • 10 ml fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Preheat the grill or grill pan to medium-high heat.
  2. Wash and slice the red bell pepper, zucchini, eggplant, and red onion into even pieces about 1 cm thick.
  3. In a small bowl, combine the minced garlic, extra virgin olive oil, fresh lemon juice, dried oregano, salt, and black pepper to make the marinade.
  4. Brush the sliced vegetables evenly with the marinade on both sides.
