- 150 g skinless chicken breast diced
- 100 g white button mushrooms sliced
- 75 g arborio rice
- 15 g unsalted butter
- 250 ml chicken broth low sodium
- 50 ml dry white wine
- 40 g onion finely diced
- 1 piece garlic clove minced
- 20 g parmesan cheese grated
- 30 ml heavy cream
- 10 ml olive oil extra virgin
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Heat olive oil in a large pan over medium heat.
- Add diced skinless chicken breast and cook until lightly browned and cooked through, about 5 minutes. Remove chicken and set aside.
- In the same pan, add unsalted butter and diced onion. Cook until onion is translucent, about 3 minutes.
- Add minced garlic and sliced white button mushrooms. Cook until mushrooms are soft, about 5 minutes.
- Add arborio rice to the pan and stir to coat the rice with butter and vegetables. Cook for 2 minutes until rice is slightly translucent at edges.
- For in dry white wine and stir continuously until wine is mostly absorbed.
- Begin adding chicken broth low sodium one ladle at a time, stirring frequently. Wait until broth is mostly absorbed before adding the next ladle.
- Continue adding broth and stirring until rice is creamy and cooked al dente, about 18-20 minutes.
- Stir in cooked chicken, heavy cream, and grated parmesan cheese. Mix well and cook for another 2 minutes to heat through.
- Season with salt and ground black pepper to taste. Remove from heat and let rest for 2 minutes before serving.
