  • 40 g granulated sugar
  • 1 piece large egg whole
  • 1 piece large egg yolk
  • 20 g all purpose flour sifted
  • 0.5 teaspoon vanilla extract
  • 1 pinch powdered sugar for dusting

  1. Preheat oven to 220 C (425 F).
  2. Grease a 6 ounce ramekin with unsalted butter and dust with cocoa powder, tapping out excess.
  3. In a microwave safe bowl, combine chopped bittersweet chocolate and unsalted butter.
  4. Microwave in 20 second intervals, stirring after each, until melted and smooth.
  5. In a separate bowl, whisk together granulated sugar, large egg whole, and large egg yolk until pale and thick.
  6. Add vanilla extract to the egg mixture and whisk to combine.
  7. Slowly add the melted chocolate mixture to the eggs, whisking constantly to avoid cooking the eggs.
  8. Sift all purpose flour over the mixture and gently fold in until just combined.
  9. For the batter into the prepared ramekin.
  10. Place ramekin on a baking sheet and bake for 12 minutes until the edges are set but the center is still soft.
  11. Remove from oven and let cool for 1 minute.
  12. Run a knife around the edges to loosen the cake and invert onto a plate.
  13. Dust with powdered sugar before serving.
