  • 150 g skinless chicken thigh
  • 1 piece lemongrass stalk minced
  • 1 piece garlic clove minced
  • 1 piece shallot minced
  • 15 ml fish sauce
  • 5 g brown sugar
  • 0.5 teaspoon black pepper ground
  • 10 ml vegetable oil
  • 5 ml lime juice fresh

  1. Clean and pat dry the skinless chicken thigh with paper towels.
  2. Peel and finely mince one lemongrass stalk, one garlic clove, and one shallot.
  3. In a bowl, combine minced lemongrass, garlic, shallot, 15 ml fish sauce, 5 g brown sugar, 0.5 teaspoon ground black pepper, 10 ml vegetable oil, and 5 ml fresh lime juice to make the marinade.
  4. Add the chicken thigh to the marinade and mix well to coat evenly.
  5. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to marinate.
  6. Preheat a grill or grill pan over medium-high heat.
  7. Remove the chicken from the marinade and place it on the grill.
  8. Cook the chicken for about 5-6 minutes on each side or until fully cooked and slightly charred.
  9. Remove the chicken from the grill and let it rest for 3 minutes before serving.
