  1. In a mixing bowl, combine 100 g all purpose flour and 1 pinch salt.
  2. Add 60 ml warm water and 1 tablespoon olive oil to the flour mixture.
  3. Mix the ingredients until a dough forms, then knead on a floured surface for 5 minutes until smooth.
  4. Cover the dough with a clean cloth and let it rest for 20 minutes.
  5. Preheat the oven to 250 degrees Celsius (482 Fahrenheit) or as high as your oven allows.
  6. Roll out the dough thinly on a floured surface to a round or rectangle shape about 3 mm thick.
  7. In a small bowl, mix 50 g sour cream with 30 ml whole milk until smooth.
  8. Spread the sour cream mixture evenly over the rolled dough, leaving a small border around the edges.
  9. Distribute 50 g thinly sliced onions evenly over the sour cream layer.
  10. Sprinkle 40 g diced smoked bacon strips on top of the onions.
  11. Season with 1 pinch ground black pepper.
  12. Place the flammekueche on a baking sheet or pizza stone and bake in the preheated oven for 10 to 12 minutes until the edges are golden and crispy.
