- 350 g porterhouse steak 2.5 cm thick
- 1 teaspoon kosher salt
- 0.5 teaspoon freshly ground black pepper
- 15 g unsalted butter
- 1 piece garlic clove crushed
- 2 piece fresh thyme sprigs
- 1 tablespoon vegetable oil

Instructions
- Remove the porterhouse steak from the refrigerator and let it rest at room temperature for 30 minutes before cooking.
- Pat the steak dry with paper towels to remove excess moisture for better searing.
- Season both sides of the steak generously with kosher salt and freshly ground black pepper.
- Heat a heavy-bottomed skillet or cast iron pan over high heat until very hot.
- Add vegetable oil to the pan and swirl to coat the surface evenly.
- Place the steak in the hot pan and sear without moving for 3 minutes to develop a crust.
- Flip the steak and sear the other side for 3 minutes.
- Reduce heat to medium and add unsalted butter, crushed garlic clove, and fresh thyme sprigs to the pan.
- Tilt the pan slightly and use a spoon to baste the steak continuously with the melted butter and aromatics for 2-3 minutes.
- Check the internal temperature with a meat thermometer; remove the steak from the pan when it reaches 52C (125F) for medium-rare.
- Transfer the steak to a plate and loosely cover with foil; let it rest for 5-10 minutes to allow juices to redistribute.
- Slice the steak against the grain and serve immediately with your choice of sides.
