  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 15 g unsalted butter
  • 1 piece garlic clove crushed
  • 2 piece fresh thyme sprigs
  • 1 tablespoon vegetable oil

  1. Remove the porterhouse steak from the refrigerator and let it rest at room temperature for 30 minutes before cooking.
  2. Pat the steak dry with paper towels to remove excess moisture for better searing.
  3. Season both sides of the steak generously with kosher salt and freshly ground black pepper.
  4. Heat a heavy-bottomed skillet or cast iron pan over high heat until very hot.
  5. Add vegetable oil to the pan and swirl to coat the surface evenly.
  6. Place the steak in the hot pan and sear without moving for 3 minutes to develop a crust.
  7. Flip the steak and sear the other side for 3 minutes.
  8. Reduce heat to medium and add unsalted butter, crushed garlic clove, and fresh thyme sprigs to the pan.
  9. Tilt the pan slightly and use a spoon to baste the steak continuously with the melted butter and aromatics for 2-3 minutes.
  10. Check the internal temperature with a meat thermometer; remove the steak from the pan when it reaches 52C (125F) for medium-rare.
  11. Transfer the steak to a plate and loosely cover with foil; let it rest for 5-10 minutes to allow juices to redistribute.
  12. Slice the steak against the grain and serve immediately with your choice of sides.
