- 150 g perch fillet skinless
- 150 g zucchini medium spiralized
- 50 ml orange juice fresh
- 1 teaspoon orange zest fresh grated
- 10 g unsalted butter
- 1 piece garlic clove minced
- 1 tablespoon olive oil extra virgin
- 1 pinch salt fine
- 1 pinch black pepper ground

Instructions
- Pat perch fillet dry with paper towel and season both sides with fine salt and ground black pepper.
- Heat extra virgin olive oil in a nonstick skillet over medium heat until hot but not smoking.
- Place perch fillet in skillet skin side down and cook without moving for 3 minutes until golden and crisp.
- Flip perch fillet carefully and cook for another 2 minutes until cooked through, then remove from skillet and keep warm.
- In the same skillet, add minced garlic and cook for 30 seconds until fragrant, stirring constantly to avoid burning.
- Add fresh orange juice and orange zest to skillet and bring to a simmer over medium heat.
- Add unsalted butter to the orange sauce and stir until melted and sauce slightly thickens, about 2 minutes.
- Add spiralized zucchini noodles to skillet and toss gently in orange sauce for 1-2 minutes until just tender but still firm.
- Season zucchini noodles with a pinch of salt and pepper to taste and remove skillet from heat.
- Plate zucchini noodles and place cooked perch fillet on top, spooning extra orange sauce over the fish.
- Serve immediately while hot.
