  • 150 g perch fillet skinless
  • 150 g zucchini medium spiralized
  • 50 ml orange juice fresh
  • 1 teaspoon orange zest fresh grated
  • 10 g unsalted butter
  • 1 piece garlic clove minced
  • 1 tablespoon olive oil extra virgin
  • 1 pinch salt fine
  • 1 pinch black pepper ground

  1. Pat perch fillet dry with paper towel and season both sides with fine salt and ground black pepper.
  2. Heat extra virgin olive oil in a nonstick skillet over medium heat until hot but not smoking.
  3. Place perch fillet in skillet skin side down and cook without moving for 3 minutes until golden and crisp.
  4. Flip perch fillet carefully and cook for another 2 minutes until cooked through, then remove from skillet and keep warm.
  5. In the same skillet, add minced garlic and cook for 30 seconds until fragrant, stirring constantly to avoid burning.
  6. Add fresh orange juice and orange zest to skillet and bring to a simmer over medium heat.
  7. Add unsalted butter to the orange sauce and stir until melted and sauce slightly thickens, about 2 minutes.
  8. Add spiralized zucchini noodles to skillet and toss gently in orange sauce for 1-2 minutes until just tender but still firm.
  9. Season zucchini noodles with a pinch of salt and pepper to taste and remove skillet from heat.
  10. Plate zucchini noodles and place cooked perch fillet on top, spooning extra orange sauce over the fish.
  11. Serve immediately while hot.
