- 50 g red bell pepper diced
- 50 g yellow onion diced
- 1 piece garlic clove minced
- 5 g fresh ginger minced
- 100 ml crushed tomatoes canned
- 30 g natural peanut butter unsweetened
- 200 ml vegetable broth low sodium
- 100 g cooked chickpeas drained
- 0.25 teaspoon cayenne pepper
- 0.5 teaspoon ground cumin
- 0.5 teaspoon ground coriander
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper ground
- 1 tablespoon cooking oil vegetable
- 5 g fresh cilantro chopped

Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add diced yellow onion and cook until translucent, about 5 minutes.
- Add minced garlic and minced fresh ginger; cook for 1 minute until fragrant.
- Add diced red bell pepper and cook for 3 minutes, stirring occasionally.
- Stir in ground cumin, ground coriander, cayenne pepper, salt, and ground black pepper; cook for 1 minute to toast spices.
- Add crushed canned tomatoes and vegetable broth; stir to combine.
- Add cubed sweet potatoes and cooked chickpeas to the pot; bring mixture to a boil.
- Reduce heat to low and simmer uncovered for 20 minutes or until sweet potatoes are tender.
- Remove pot from heat and stir in natural unsweetened peanut butter until fully incorporated.
- Return pot to low heat and cook for 5 more minutes, stirring occasionally to thicken the stew.
- Taste and adjust seasoning with additional salt or pepper if needed.
- Serve hot garnished with chopped fresh cilantro.
