  • 80 g couscous (dry)
  • 50 g cherry tomatoes halved
  • 50 g cucumber peeled diced
  • 40 g red bell pepper diced
  • 10 g fresh parsley chopped
  • 5 g fresh mint chopped
  • 15 ml lemon juice fresh
  • 10 ml extra virgin olive oil
  • 1 pinch salt
  • 1 pinch black pepper ground

Instructions

  1. Bring 100 ml of water to a boil in a small pot.
  2. Place dry couscous in a heatproof bowl.
  3. For boiling water over couscous, cover with a lid or plate, and let it sit for 5 minutes.
  4. Fluff couscous with a fork to separate grains.
  5. Wash and halve cherry tomatoes.
  6. Peel cucumber, remove seeds if desired, and dice into small cubes.
  7. Remove seeds from red bell pepper and dice into small pieces.
  8. Chop fresh parsley and fresh mint finely.
  9. In a small bowl, whisk together fresh lemon juice, extra virgin olive oil, salt, and ground black pepper to make dressing.
  10. Combine couscous, cherry tomatoes, cucumber, red bell pepper, parsley, and mint in a large bowl.
  11. For dressing over the salad and toss gently to combine all ingredients evenly.
  12. Taste and adjust seasoning with more salt or lemon juice if needed.
  13. Serve fresh or chilled for best flavor.
