- 200 g monkfish tail skinless
- 15 g unsalted butter
- 50 g onion diced
- 1 piece garlic clove minced
- 40 g carrot diced
- 30 g celery stalk diced
- 50 ml dry white wine
- 150 ml fish stock
- 50 ml heavy cream
- 1 pinch saffron threads
- 5 g fresh parsley chopped
- 1 pinch salt
- 1 pinch black pepper ground

- Cut the monkfish tail into bite-sized cubes and set aside.
- Dice the onion, carrot, and celery stalk finely.
- Mince the garlic clove.
- In a medium saucepan, melt the unsalted butter over medium heat.
- Add the diced onion, carrot, celery, and minced garlic to the pan and cook until softened, about 5 minutes.
- For in the dry white wine and let it simmer until reduced by half.
- Add the fish stock and saffron threads to the pan, stir well, and bring to a gentle simmer.
- Add the monkfish cubes to the stew and cook for 8-10 minutes until the fish is opaque and cooked through.
- Stir in the heavy cream and chopped fresh parsley, then season with salt and ground black pepper to taste.
- Simmer the stew for another 2 minutes to blend the flavors, then remove from heat and serve hot.
