- 100 g eggplant diced
- 100 g zucchini diced
- 50 g red bell pepper diced
- 50 g yellow bell pepper diced
- 50 g onion diced
- 1 piece garlic clove minced
- 150 g tomato crushed canned
- 1 tablespoon olive oil extra virgin
- 50 g goat cheese crumbled
- 30 g bacon strips chopped
- 3 piece lasagna sheets dry
- 5 g fresh basil leaves chopped
- 1 pinch salt
- 1 pinch black pepper ground

- Preheat oven to 180 degrees Celsius (350 Fahrenheit).
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and minced garlic clove; cook until softened, about 3 minutes.
- Add diced eggplant, zucchini, red and yellow bell peppers; cook until vegetables are tender, about 8 minutes.
- Add crushed canned tomato, salt, and ground black pepper; simmer for 10 minutes to make vegetable sauce.
- In a separate pan, cook chopped bacon strips until crispy; drain excess fat.
- Boil lasagna sheets in salted water until al dente; drain and set aside.
- In a baking dish, spread a thin layer of vegetable sauce.
- Place one lasagna sheet over the sauce.
- Add half of the vegetable sauce, half of the crumbled goat cheese, and half of the cooked bacon.
- Repeat layering with another lasagna sheet, remaining sauce, goat cheese, and bacon.
- Top with the last lasagna sheet and a sprinkle of chopped fresh basil leaves.
- Cover with foil and bake in preheated oven for 25 minutes.
- Remove foil and bake for an additional 10 minutes until top is golden and bubbly.
- Let lasagna rest for 10 minutes before serving.
