  • 250 ml vegetable broth low sodium

  • 1 pinch black pepper ground

  1. Wash turnip greens thoroughly and chop into bite-sized pieces.
  2. Peel and dice the carrot into small cubes.
  3. Dice the yellow onion finely.
  4. Peel and dice the potato into small cubes.
  5. Heat olive oil in a medium pot over medium heat.
  6. Add diced onion and minced garlic to the pot and cook until translucent, about 3 minutes.
  7. Add diced carrot and potato to the pot and stir for 2 minutes.
  8. For in the vegetable broth and bring to a boil.
  9. Add chopped turnip greens to the pot, reduce heat to low, and simmer for 20 minutes until vegetables are tender.
  10. Season with salt and ground black pepper to taste.
  11. Use an immersion blender to puree the soup until smooth but still slightly textured.
  12. Serve hot with a drizzle of olive oil if desired.
