Instructions
- In a bowl, combine ground turkey, half of the minced garlic, dried oregano, dried thyme, salt, and black pepper. Mix well and form into small meatballs about 2 cm in diameter.
- Heat olive oil in a medium pot over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes. Remove meatballs and set aside.
- In the same pot, add diced yellow onion, carrot, and celery. Cook for 5 minutes until vegetables soften, stirring occasionally.
- Add the remaining minced garlic and cook for 1 minute until fragrant.
- For in canned diced tomatoes with juice and chicken broth. Stir to combine and bring to a simmer.
- Add diced potato to the pot. Return the meatballs to the pot as well.
- Cover and simmer the stew on low heat for 25 minutes, or until potatoes are tender and meatballs are cooked through.
- Taste and adjust seasoning with additional salt and pepper if needed.
- Serve hot, garnished with fresh herbs if desired.
Tips
- Use lean ground turkey to keep the stew light and healthy.
- Brown the meatballs well to add flavor and texture.
