- 100 g carrot peeled and diced
- 80 g yellow onion diced
- 50 g celery stalk diced
- 1 piece garlic clove minced
- 15 g tomato paste
- 250 ml chicken broth low sodium
- 0.5 teaspoon dried thyme
- 1 piece bay leaf
- 1 tablespoon olive oil extra virgin
- 1 pinch salt
- 1 pinch black pepper ground

- Heat olive oil in a large pot over medium heat.
- Add diced smoked pork shoulder and cook until browned on all sides, about 5 minutes.
- Remove pork from pot and set aside.
- Add diced yellow onion, carrot, and celery to the pot and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in tomato paste and cook for 2 minutes to deepen flavor.
- Return browned pork to the pot and add chicken broth, dried thyme, and bay leaf.
- Bring stew to a boil, then reduce heat to low and cover.
- Simmer stew gently for 1 hour, stirring occasionally, until pork is tender.
- Remove bay leaf and season stew with salt and ground black pepper to taste.
- Serve hot with crusty bread or over cooked rice.
