  • 50 g smoked bacon diced
  • 50 ml whole milk
  • 50 ml heavy cream
  • 1 piece eggs large
  • 30 g cantal cheese grated
  • 30 g onion medium diced
  • 10 g unsalted butter
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. Roll out the shortcrust pastry sheet and place it into a tart pan, pressing it evenly against the bottom and sides.
  3. Prick the pastry base with a fork to prevent bubbling during baking.
  4. Melt the unsalted butter in a pan over medium heat.
  5. Add the diced onion to the pan and cook until translucent, about 5 minutes.
  6. Add the diced smoked bacon to the pan and cook until lightly browned, about 5 minutes.
  7. In a mixing bowl, whisk together the whole milk, heavy cream, and the large egg until fully combined.
  8. Add the grated cantal cheese to the milk mixture and stir well.
  9. Add the cooked onion and bacon mixture to the milk and cheese mixture and stir to combine.
  10. Season the filling with a pinch of salt and ground black pepper.
  11. For the filling evenly over the pastry in the tart pan.
  12. Bake the tart in the preheated oven for 30 to 35 minutes, or until the filling is set and the top is golden brown.
  13. Remove the tart from the oven and let it cool for 10 minutes before slicing and serving.
