- 100 g shortcrust pastry sheet
- 50 g smoked bacon diced
- 50 ml whole milk
- 50 ml heavy cream
- 1 piece eggs large
- 30 g cantal cheese grated
- 30 g onion medium diced
- 10 g unsalted butter
- 1 pinch salt
- 1 pinch black pepper ground

- Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
- Roll out the shortcrust pastry sheet and place it into a tart pan, pressing it evenly against the bottom and sides.
- Prick the pastry base with a fork to prevent bubbling during baking.
- Melt the unsalted butter in a pan over medium heat.
- Add the diced onion to the pan and cook until translucent, about 5 minutes.
- Add the diced smoked bacon to the pan and cook until lightly browned, about 5 minutes.
- In a mixing bowl, whisk together the whole milk, heavy cream, and the large egg until fully combined.
- Add the grated cantal cheese to the milk mixture and stir well.
- Add the cooked onion and bacon mixture to the milk and cheese mixture and stir to combine.
- Season the filling with a pinch of salt and ground black pepper.
- For the filling evenly over the pastry in the tart pan.
- Bake the tart in the preheated oven for 30 to 35 minutes, or until the filling is set and the top is golden brown.
- Remove the tart from the oven and let it cool for 10 minutes before slicing and serving.
