- 200 g flank steak raw
- 50 g green bell pepper sliced
- 50 g red bell pepper sliced
- 60 g yellow onion sliced
- 1 piece garlic clove minced
- 100 g diced tomatoes canned
- 15 g tomato paste
- 20 g green olives sliced
- 100 ml beef broth low sodium
- 10 ml olive oil extra virgin
- 0.5 teaspoon ground cumin
- 0.5 teaspoon dried oregano
- 1 piece bay leaf dried
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper ground

Instructions
- Cut flank steak into large chunks for boiling.
- Place beef chunks in a pot and cover with water, bring to a boil.
- Reduce heat and simmer beef for about 1 hour until tender.
- Remove beef from broth and shred using two forks once cool enough to handle.
- Heat olive oil in a large skillet over medium heat.
- Add sliced yellow onion and minced garlic, cook until softened about 5 minutes.
- Add sliced green and red bell peppers, cook for 3 minutes until slightly tender.
- Stir in diced canned tomatoes and tomato paste, cook for 2 minutes.
- Add shredded beef to the skillet and mix well with vegetables and tomato sauce.
- For in beef broth, add sliced green olives, ground cumin, dried oregano, bay leaf, salt, and black pepper.
- Stir everything together and bring to a simmer.
- Cover and cook on low heat for 20 minutes to blend flavors.
- Remove bay leaf before serving.
