- 50 g egusi melon seeds ground
- 30 ml palm oil red
- 40 g onion medium diced
- 1 piece garlic clove minced
- 30 g fresh spinach leaves chopped
- 100 g beef chunks lean
- 200 ml stock beef low sodium
- 0.5 piece scotch bonnet pepper minced
- 10 g crayfish ground dried
- 0.5 teaspoon salt fine
- 150 ml water

Instructions
- Heat palm oil red in a pot over medium heat until hot but not smoking.
- Add diced onion and minced garlic clove to the pot and cook until translucent, about 3 minutes.
- Add beef chunks lean and brown on all sides for about 5 minutes.
- Add minced scotch bonnet pepper and ground crayfish dried, stir well for 2 minutes.
- For in beef stock low sodium and water, bring to a boil, then reduce heat and simmer for 20 minutes until beef is tender.
- Gradually add ground egusi melon seeds while stirring continuously to avoid lumps.
- Cook the mixture on low heat for 10 minutes, stirring occasionally to prevent sticking.
- Add chopped fresh spinach leaves and salt fine, stir and cook for another 5 minutes.
- Adjust seasoning if needed and remove from heat.
- Serve hot with your choice of side such as fufu or rice.
