- 20 g unsalted butter
- 15 g all purpose flour
- 150 ml whole milk
- 1 piece large egg yolk
- 1 piece large egg white
- 10 g grated parmesan cheese
- 1 pinch salt
- 1 pinch white pepper ground
- 5 ml fresh lemon juice

- Preheat oven to 180 degrees Celsius (350 Fahrenheit).
- Butter a 1-cup souffle dish and sprinkle with grated parmesan cheese to coat the inside.
- Melt unsalted butter in a small saucepan over medium heat.
- Add all purpose flour to the melted butter and whisk continuously for 1 minute to make a roux.
- Gradually add whole milk while whisking to avoid lumps and cook until the mixture thickens, about 3-4 minutes.
- Remove from heat and stir in cooked lobster meat chopped, salt, white pepper ground, and fresh lemon juice.
- Beat large egg yolk in a small bowl and quickly whisk it into the warm lobster sauce to temper it.
- In a separate clean bowl, beat large egg white until stiff peaks form.
- Gently fold the beaten egg white into the lobster sauce mixture in three additions, being careful not to deflate the mixture.
- For the souffle batter into the prepared souffle dish and smooth the top.
- Place the souffle dish on a baking sheet and bake in the preheated oven for 20-25 minutes until puffed and golden on top.
- Serve immediately for best texture and presentation.
