  • 200 g lamb shoulder diced
  • 50 g smoked bacon strips chopped
  • 60 g carrot peeled diced
  • 50 g onion yellow diced
  • 1 piece garlic clove minced
  • 15 g tomato paste
  • 150 ml beef broth low sodium
  • 50 ml red wine dry
  • 2 piece fresh thyme sprigs
  • 1 tablespoon olive oil extra virgin
  • 1 pinch salt fine
  • 1 pinch black pepper ground

Instructions

  1. Heat olive oil in a heavy casserole pot over medium heat.
  2. Add diced smoked bacon strips and cook until crispy, about 5 minutes.
  3. Remove bacon with a slotted spoon and set aside.
  4. Add diced lamb shoulder to the pot and brown on all sides, about 8 minutes.
  5. Add diced yellow onion and minced garlic clove to the pot and cook until softened, about 5 minutes.
  6. Stir in diced carrot and tomato paste, cook for 2 minutes to combine flavors.
  7. For in red wine dry and simmer until reduced by half, about 5 minutes.
  8. Add beef broth low sodium and fresh thyme sprigs to the pot.
  9. Return cooked bacon to the pot and stir to combine.
  10. Season with fine salt and ground black pepper to taste.
  11. Cover the pot and reduce heat to low, simmer gently for 1 hour 30 minutes until lamb is tender.
  12. Remove thyme sprigs and adjust seasoning if needed before serving.
