  • 100 g canned chickpeas drained and rinsed
  • 50 g onion diced
  • 1 piece garlic clove minced
  • 10 g fresh ginger minced
  • 100 g canned diced tomatoes
  • 100 ml coconut milk
  • 1 tablespoon vegetable oil
  • 1 teaspoon curry powder
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper ground
  • 5 g fresh cilantro chopped

  1. Heat vegetable oil in a medium saucepan over medium heat.
  2. Add diced onion and cook until soft and translucent, about 5 minutes.
  3. Add minced garlic and minced fresh ginger; cook for 1 minute until fragrant.
  4. Stir in curry powder, ground cumin, and ground coriander; cook spices for 1 minute to release aroma.
  5. Add diced skinless chicken breast to the pan and cook until no longer pink, about 5 minutes.
  6. For in canned diced tomatoes and coconut milk; stir to combine.
  7. Add drained and rinsed canned chickpeas to the curry mixture.
  8. Season with salt and ground black pepper; stir well.
  9. Bring the curry to a simmer, reduce heat to low, and cook uncovered for 15 minutes, stirring occasionally.
  10. Taste and adjust seasoning if needed.
  11. Remove from heat and garnish with chopped fresh cilantro before serving.
