Instructions

  1. In a large bowl, combine whole wheat flour, fine salt, and ground cumin seed.
  2. Slowly add warm water to the flour mixture while stirring with your hand or spoon.
  3. Add extra virgin olive oil and knead the dough inside the bowl until it forms a soft, smooth ball.
  4. Transfer the dough to a clean surface and knead for 5 minutes until elastic and no longer sticky.
  5. Cover the dough with a damp cloth and let it rest for 30 minutes at room temperature.
  6. Divide the dough into one equal piece for one serving and roll it into a ball.
  7. Lightly flour the rolling surface and roll the dough ball into a thin circle about 20 cm in diameter.
  8. Heat a nonstick skillet over medium heat until hot.
  9. Place the rolled dough onto the skillet and cook for 1-2 minutes until bubbles form on the surface.
  10. Flip the flatbread and cook the other side for 1-2 minutes until golden brown spots appear.
  11. Remove the flatbread from the skillet and keep warm in a clean towel while cooking is repeated if making more servings.

Tips

  • Use warm water to help the dough rise and become soft.
  • Resting the dough covered prevents drying and improves texture.
