- 1 piece fresh ear of corn with husk removed
- 1 piece dried guajillo chile pod
- 30 g sour cream
- 20 g crumbled cotija cheese
- 10 ml fresh lime juice
- 10 g unsalted butter
- 1 pinch kosher salt

- Preheat grill to medium-high heat.
- Place dried guajillo chile pod on grill and roast for 2-3 minutes per side until fragrant and slightly charred.
- Remove chile pod from grill and place in a small bowl with hot water to soak for 10 minutes.
- Remove husk and silk from the ear of corn.
- Brush the ear of corn with melted unsalted butter evenly on all sides.
- Place the corn on the grill and cook for 10-12 minutes, turning every 2-3 minutes until charred and cooked through.
- Drain the soaked guajillo chile pod and finely chop it, discarding seeds if desired.
- In a small bowl, mix sour cream with chopped roasted chile and fresh lime juice until combined.
- Remove grilled corn from grill and brush with the chile sour cream mixture generously.
- Sprinkle crumbled cotija cheese evenly over the coated corn.
- Add a pinch of kosher salt to taste.
- Serve immediately while warm.
