  • 200 g pumpkin flesh peeled and cubed
  • 15 g unsalted butter
  • 50 g onion diced
  • 1 piece garlic clove minced
  • 250 ml vegetable broth low sodium
  • 100 ml whole milk
  • 1 pinch salt
  • 1 pinch black pepper ground
  • 1 pinch nutmeg ground

  1. Peel the pumpkin and cut the flesh into 2 cm cubes.
  2. Dice the onion finely and mince the garlic clove.
  3. In a medium pot, melt the unsalted butter over medium heat.
  4. Add the diced onion and minced garlic to the pot and cook until soft and translucent, about 5 minutes.
  5. Add the pumpkin cubes to the pot and stir to combine with the onion and garlic.
  6. For in the vegetable broth and bring the mixture to a boil.
  7. Reduce heat to low and simmer until the pumpkin is tender, about 20 minutes.
  8. Remove the pot from heat and use an immersion blender to puree the soup until smooth and creamy.
  9. Return the pot to low heat and stir in the whole milk.
  10. Season the soup with salt, ground black pepper, and a pinch of ground nutmeg.
  11. Heat the soup gently for 5 more minutes without boiling, stirring occasionally.
  12. Serve hot with a garnish of your choice such as fresh herbs or a swirl of cream.
