- 200 g carrot peeled and chopped
- 15 g unsalted butter
- 50 g onion diced
- 1 piece garlic clove minced
- 300 ml vegetable broth low sodium
- 100 ml whole milk
- 30 g blue cheese crumbled
- 1 pinch black pepper ground
- 1 pinch salt

- Peel and chop the carrots into small pieces for even cooking.
- Dice the onion finely and mince the garlic clove.
- In a medium pot, melt the unsalted butter over medium heat.
- Add the diced onion to the pot and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for 1 minute until fragrant, stirring constantly.
- Add the chopped carrots to the pot and stir to combine with the onion and garlic.
- For in the low sodium vegetable broth and bring the mixture to a boil.
- Reduce heat to low and simmer until carrots are tender, about 20 minutes.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth.
- Return the pot to low heat and stir in the whole milk and crumbled blue cheese until cheese melts and soup is creamy.
- Season with salt and ground black pepper to taste, stirring well.
