  • 100 g canned tuna in water drained
  • 50 g red bell pepper diced
  • 50 g cucumber peeled and diced
  • 20 g red onion finely chopped
  • 5 g fresh parsley chopped
  • 15 ml extra virgin olive oil
  • 10 ml fresh lemon juice
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Cook white rice according to package instructions and let it cool to room temperature.
  2. Drain canned tuna and flake it gently with a fork into small pieces.
  3. Wash red bell pepper, remove seeds, and dice into small cubes.
  4. Peel cucumber, remove seeds if desired, and dice into small cubes.
  5. Peel red onion and finely chop it into small pieces.
  6. Chop fresh parsley finely and set aside.
  7. In a large bowl, combine cooled cooked rice, flaked tuna, diced red bell pepper, diced cucumber, chopped red onion, and chopped parsley.
  8. In a small bowl, whisk together extra virgin olive oil, fresh lemon juice, salt, and ground black pepper to make the dressing.
