- 150 g fresh ripe red tomato diced
- 100 g dry spaghetti pasta
- 15 ml extra virgin olive oil
- 1 piece garlic clove minced
- 5 g fresh basil leaves chopped
- 1 pinch salt fine
- 1 pinch black pepper ground
- 10 g parmesan cheese grated

Instructions
- Bring a large pot of salted water to a boil.
- Add dry spaghetti pasta to boiling water and cook according to package instructions until al dente, about 8 minutes.
- While pasta cooks, heat extra virgin olive oil in a medium skillet over medium heat.
- Add minced garlic clove to the skillet and cook for 1 minute until fragrant, stirring constantly to avoid burning.
- Add diced fresh ripe red tomatoes to the skillet and cook for 5 minutes, stirring occasionally, until tomatoes soften and release juice.
- Season tomato sauce with a pinch of fine salt and ground black pepper, stir well.
- Drain cooked pasta reserving 50 ml of pasta water.
- Add drained pasta to the skillet with tomato sauce and toss to combine, adding reserved pasta water little by little to loosen sauce if needed.
- Remove skillet from heat and stir in chopped fresh basil leaves.
- Serve pasta on a plate and sprinkle grated parmesan cheese on top before serving.
