- 100 g fresh sweet peas shelled
- 5 g fresh dill chopped
- 10 ml lemon juice fresh
- 15 ml extra virgin olive oil
- 1 pinch sea salt
- 1 pinch black pepper ground
- 20 g red onion thinly sliced

- Shell the fresh sweet peas and rinse them under cold water.
- Bring a small pot of water to a boil and blanch the peas for 2 minutes.
- Drain the peas and immediately transfer them to a bowl of ice water to stop cooking.
- Drain the peas again and set aside to dry.
- Chop the fresh dill finely and thinly slice the red onion.
- In a mixing bowl, combine the blanched peas, chopped dill, and sliced red onion.
- Add fresh lemon juice and extra virgin olive oil to the bowl.
- Season with a pinch of sea salt and ground black pepper.
- Gently toss all ingredients together until evenly mixed.
- Serve the salad chilled or at room temperature.
