  • 1 piece fresh red chili sliced

  • 1 pinch black pepper ground
  • 15 ml coconut vinegar
  • 30 g fresh cucumber peeled and diced

  1. Clean the fresh sea scallops by rinsing them under cold water and pat dry with paper towels.
  2. Slice the red onion thinly and place in a mixing bowl.
  3. Peel and julienne the fresh ginger and add to the bowl with the onion.
  4. Slice the fresh red chili into thin rings and add to the bowl.
  5. Add the diced fresh cucumber to the bowl.
  6. For the calamansi juice or fresh lime juice over the ingredients in the bowl.
  7. Add the coconut vinegar to the bowl.
  8. Season the mixture with a pinch of salt and ground black pepper.
  9. Gently mix all ingredients together to combine and marinate for 10 minutes in the refrigerator.
