- 300 g ripe red tomatoes cut in halves
- 50 g yellow onion diced
- 1 piece garlic clove minced
- 15 ml extra virgin olive oil
- 250 ml vegetable broth low sodium
- 5 g fresh basil leaves chopped
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Preheat the oven to 200 degrees Celsius (about 400 Fahrenheit).
- Place the halved ripe red tomatoes and diced yellow onion on a baking sheet.
- Drizzle the extra virgin olive oil over the tomatoes and onions.
- Add the minced garlic clove evenly over the vegetables.
- Sprinkle a pinch of salt and ground black pepper over everything.
- Roast the vegetables in the oven for 30 minutes until soft and slightly caramelized.
- Remove the roasted vegetables from the oven and transfer them to a blender.
- Add the low sodium vegetable broth and chopped fresh basil leaves to the blender.
- Blend the mixture until smooth and creamy.
- For the blended soup into a saucepan and heat gently over medium heat for 5 minutes.
- Taste and adjust seasoning with additional salt or pepper if needed.
- Serve the soup hot, garnished with a few fresh basil leaves if desired.
