  • 300 g ripe red tomatoes cut in halves
  • 50 g yellow onion diced
  • 1 piece garlic clove minced
  • 15 ml extra virgin olive oil
  • 250 ml vegetable broth low sodium
  • 5 g fresh basil leaves chopped
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Preheat the oven to 200 degrees Celsius (about 400 Fahrenheit).
  2. Place the halved ripe red tomatoes and diced yellow onion on a baking sheet.
  3. Drizzle the extra virgin olive oil over the tomatoes and onions.
  4. Add the minced garlic clove evenly over the vegetables.
  5. Sprinkle a pinch of salt and ground black pepper over everything.
  6. Roast the vegetables in the oven for 30 minutes until soft and slightly caramelized.
  7. Remove the roasted vegetables from the oven and transfer them to a blender.
  8. Add the low sodium vegetable broth and chopped fresh basil leaves to the blender.
  9. Blend the mixture until smooth and creamy.
  10. For the blended soup into a saucepan and heat gently over medium heat for 5 minutes.
  11. Taste and adjust seasoning with additional salt or pepper if needed.
  12. Serve the soup hot, garnished with a few fresh basil leaves if desired.
