  • 2 piece phyllo dough sheet
  • 50 g crumbled feta cheese
  • 30 g grated mozzarella cheese
  • 5 g fresh parsley chopped
  • 10 g unsalted butter melted
  • 1 pinch ground black pepper
  • 15 ml olive oil

Instructions

  1. Preheat the oven to 190 degrees Celsius (375 degrees Fahrenheit).
  2. Lay one phyllo dough sheet flat on a clean surface and brush it lightly with melted unsalted butter.
  3. Place the second phyllo dough sheet on top and brush it with melted butter as well.
  4. In a bowl, combine crumbled feta cheese, grated mozzarella cheese, chopped fresh parsley, and a pinch of ground black pepper.
  5. Cut the layered phyllo sheets into strips about 5 cm wide.
  6. Place a spoonful of the cheese mixture at one end of each strip.
  7. Fold the strip over the filling to form a triangle, then continue folding the triangle along the strip until the entire strip is folded.
  8. Brush each briouat with olive oil on all sides and place them on a baking sheet lined with parchment paper.
  9. Bake in the preheated oven for 15 to 20 minutes or until the briouats are golden brown and crispy.
  10. Remove from the oven and let cool slightly before serving.
