  • 2 piece large egg
  • 30 ml whole milk
  • 15 g green onion sliced
  • 20 g red bell pepper diced
  • 10 g unsalted butter
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Boil 250 ml water in a small pot.
  2. Add instant ramen noodles to boiling water and cook for 2 minutes until just tender.
  3. Drain noodles and set aside.
  4. In a bowl, beat 2 large eggs with 30 ml whole milk, salt, and ground black pepper.
  5. Heat 10 g unsalted butter in a nonstick skillet over medium heat.
  6. Add diced red bell pepper and sliced green onion to skillet and cook for 2 minutes until slightly softened.
  7. Add cooked ramen noodles to skillet and spread evenly.
  8. For egg mixture over noodles and vegetables in skillet.
  9. Cook on medium-low heat for 5 minutes until edges are set.
  10. Cover skillet with a lid and cook for another 3 minutes until frittata is fully set and cooked through.
  11. Use a spatula to loosen edges and slide frittata onto a plate.
  12. Cut into wedges and serve warm.
