- 200 g skinless chicken thigh
- 50 g red bell pepper diced
- 50 g green bell pepper diced
- 60 g onion diced
- 1 piece garlic clove minced
- 80 g ripe tomato diced
- 10 g tomato paste
- 50 ml dry white wine
- 100 ml chicken broth low sodium
- 15 ml olive oil extra virgin
- 1 teaspoon smoked paprika
- 0.5 teaspoon dried thyme
- 1 piece bay leaf
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Heat olive oil in a Dutch oven over medium heat.
- Add skinless chicken thighs and brown on all sides for 5 minutes.
- Remove chicken and set aside.
- Add diced onion to the pot and cook until translucent, about 3 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Add diced red and green bell peppers and cook for 4 minutes until softened.
- Stir in diced ripe tomato and tomato paste, cook for 2 minutes.
- For in dry white wine and simmer until reduced by half, about 3 minutes.
- Return chicken to the pot and add chicken broth, smoked paprika, dried thyme, bay leaf, salt, and black pepper.
- Bring to a boil, then reduce heat to low and cover.
- Simmer gently for 30 minutes until chicken is tender and sauce thickens.
- Remove bay leaf before serving.
