  • 200 g skinless chicken thigh
  • 50 g red bell pepper diced
  • 50 g green bell pepper diced
  • 60 g onion diced
  • 1 piece garlic clove minced
  • 80 g ripe tomato diced
  • 10 g tomato paste
  • 50 ml dry white wine
  • 100 ml chicken broth low sodium
  • 15 ml olive oil extra virgin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 1 piece bay leaf
  • 1 pinch salt
  • 1 pinch black pepper ground

Instructions

  1. Heat olive oil in a Dutch oven over medium heat.
  2. Add skinless chicken thighs and brown on all sides for 5 minutes.
  3. Remove chicken and set aside.
  4. Add diced onion to the pot and cook until translucent, about 3 minutes.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Add diced red and green bell peppers and cook for 4 minutes until softened.
  7. Stir in diced ripe tomato and tomato paste, cook for 2 minutes.
  8. For in dry white wine and simmer until reduced by half, about 3 minutes.
  9. Return chicken to the pot and add chicken broth, smoked paprika, dried thyme, bay leaf, salt, and black pepper.
  10. Bring to a boil, then reduce heat to low and cover.
  11. Simmer gently for 30 minutes until chicken is tender and sauce thickens.
  12. Remove bay leaf before serving.
