  • 30 g unsalted butter chilled diced
  • 20 g granulated sugar
  • 1 piece egg yolk
  • 40 g pineapple chunks canned drained
  • 20 g cream cheese softened
  • 10 g powdered sugar
  • 0.5 teaspoon vanilla extract

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. In a mixing bowl, combine all purpose flour and granulated sugar.
  3. Add chilled diced unsalted butter to the flour mixture and use your fingers to rub it in until the mixture resembles coarse crumbs.
  4. Add the egg yolk and mix gently until the dough comes together. Do not overmix.
  5. Wrap the dough in plastic wrap and refrigerate for 15 minutes.
  6. Roll out the dough on a lightly floured surface to about 3 mm thickness.
  7. Cut the dough into small circles to fit your tart molds and press the dough into the molds evenly.
  8. In a small bowl, mix softened cream cheese, powdered sugar, and vanilla extract until smooth.

  10. Top each tart with pineapple chunks evenly.
  11. Bake the tarts in the preheated oven for 15 minutes or until the edges are golden brown.
  12. Remove from oven and let cool in the molds for 10 minutes before transferring to a wire rack to cool completely.
