  • 100 g shrimp peeled deveined raw
  • 2 piece garlic clove minced
  • 15 ml lemon juice fresh
  • 15 ml olive oil extra virgin
  • 50 g green bell pepper sliced
  • 50 g red bell pepper sliced
  • 20 g spring onion chopped
  • 10 ml soy sauce low sodium
  • 1 pinch black pepper ground
  • 1 pinch salt fine

  1. Pat dry the sea scallops and shrimp with paper towels to remove excess moisture.
  2. Heat olive oil in a wok or large skillet over medium-high heat until shimmering.
  3. Add minced garlic to the hot oil and stir-fry for 30 seconds until fragrant but not browned.
  4. Add sea scallops and shrimp to the wok in a single layer and cook without stirring for 2 minutes to get a light sear.
  5. Flip the scallops and shrimp and cook for another 1-2 minutes until opaque and cooked through.
  6. Add sliced green and red bell peppers to the wok and stir-fry for 2 minutes until slightly tender but still crisp.
  7. For fresh lemon juice and low sodium soy sauce over the seafood and vegetables, stirring to combine.
  8. Season with salt and ground black pepper to taste, then add chopped spring onions and toss everything together.
