  • 80 g carrot peeled and sliced
  • 60 g onion diced
  • 40 g celery stalk diced
  • 1 piece garlic clove minced
  • 15 g tomato paste
  • 150 ml dry red wine
  • 200 ml beef broth low sodium
  • 1 tablespoon olive oil extra virgin
  • 1 tablespoon all purpose flour
  • 1 piece fresh thyme sprig
  • 1 piece bay leaf dried
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Pat bull meat cubes dry with paper towels.
  2. Season bull meat cubes with salt and black pepper.
  3. Heat olive oil in a heavy pot over medium-high heat.
  4. Add bull meat cubes in batches and brown on all sides, about 5 minutes per batch.
  5. Remove browned meat and set aside.
  6. Add diced onion, carrot, celery, and minced garlic to the pot.
  7. Cook vegetables until softened, about 5 minutes, stirring occasionally.
  8. Sprinkle all purpose flour over vegetables and stir well to coat.
  9. Cook flour for 1 minute to remove raw taste.
  10. For in dry red wine and stir to deglaze the pot, scraping browned bits from bottom.
  11. Add beef broth, tomato paste, browned bull meat cubes, fresh thyme sprig, and bay leaf.
  12. Bring stew to a boil, then reduce heat to low and cover.
  13. Simmer gently for 2 to 3 hours until meat is tender, stirring occasionally.
  14. Remove thyme sprig and bay leaf before serving.
