- 100 g raw shrimp peeled and deveined
- 80 g clams cleaned
- 50 g onion diced
- 40 g carrot diced
- 30 g celery stalk diced
- 1 piece garlic clove minced
- 100 g canned diced tomatoes
- 200 ml chicken broth low sodium
- 50 ml dry white wine
- 1 tablespoon olive oil extra virgin
- 1 tablespoon fresh parsley chopped
- 0.5 teaspoon dried thyme
- 1 pinch salt
- 1 pinch black pepper ground

- Heat olive oil in a large pot over medium heat.
- Add diced onion, carrot, and celery to the pot and cook until softened, about 5 minutes.
- Add minced garlic and dried thyme; cook for 1 minute until fragrant.
- Add diced skinless chicken breast and cook until lightly browned on all sides.
- For in dry white wine and let it simmer for 2 minutes to reduce slightly.
- Add canned diced tomatoes and chicken broth; stir to combine.
- Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
- Add raw shrimp and cleaned clams to the pot; cover and cook until shrimp are pink and clams have opened, about 5 minutes.
- Discard any unopened clams; season stew with salt and ground black pepper to taste.
- Stir in chopped fresh parsley and remove from heat.
- Serve the stew hot with crusty bread or over cooked rice.
