- 100 g eggplant slice peeled
- 50 g skinless ham slice
- 1 piece whole wheat bread slice
- 30 g mozzarella cheese slice
- 1 tablespoon olive oil
- 1 piece garlic clove minced
- 1 pinch black pepper ground
- 1 pinch salt

- Preheat oven to 200 degrees Celsius (about 390 Fahrenheit).
- Brush the eggplant slice with half the olive oil on both sides.
- Sprinkle a pinch of salt and black pepper on the eggplant slice.
- Place the eggplant slice on a baking sheet and roast in the oven for 15 minutes until tender.
- While eggplant roasts, lightly toast the whole wheat bread slice until golden.
- Remove eggplant from oven and place the roasted slice on top of the toasted bread.
- Layer the skinless ham slice evenly over the eggplant.
- Add the mozzarella cheese slice on top of the ham.
- Return the assembled sandwich to the oven and bake for 5 minutes until cheese melts and bubbles.
- Remove from oven and let cool for 2 minutes before serving.
