Instructions
- Preheat the oven to 200 degrees Celsius (about 400 degrees Fahrenheit).
- In a large bowl, combine all-purpose flour, granulated sugar, baking powder, and salt. Mix well.
- Add the cold diced unsalted butter to the flour mixture. Use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.
- In a separate small bowl, mash the ripe banana until smooth.
- Add the mashed banana, whole milk, and vanilla extract to the flour mixture. Stir gently until just combined; do not overmix.
- Fold in the fresh blueberries and chopped walnuts carefully to avoid crushing the berries.
- Turn the dough out onto a lightly floured surface and pat it into a circle about 2 cm thick.
- Cut the dough circle into 6 equal wedges and place them on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15 to 18 minutes or until the scones are golden brown on top.
- Remove from the oven and let the scones cool on a wire rack for 10 minutes before serving.
Tips
- Use cold butter to ensure flaky scones.
