  • 200 g golden baby potatoes
  • 15 ml extra virgin olive oil
  • 1 piece garlic clove minced
  • 1 teaspoon fresh rosemary leaves chopped
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper ground

Instructions

  1. Preheat the oven to 220 C (425 F).
  2. Place the whole spatchcock chicken on a cutting board breast side down.
  3. Using kitchen shears, cut along both sides of the backbone and remove it.
  4. Flip the chicken over and press firmly on the breastbone to flatten it.
  5. Wash and halve the golden baby potatoes.
  6. In a bowl, toss the potatoes with half the olive oil, half the minced garlic, half the rosemary, half the salt, and half the pepper.
  7. Place the potatoes on a baking tray in a single layer.
  8. Rub the chicken all over with the remaining olive oil, garlic, rosemary, salt, and pepper.
  9. Place the chicken skin side up on top of the potatoes on the baking tray.
  10. Roast in the preheated oven for 40 to 45 minutes until the skin is golden and crispy and the chicken is cooked through.
  11. Remove from the oven and let rest for 10 minutes before carving.
  12. Serve the crispy roasted spatchcock chicken with the golden potatoes on the side.
