  • 150 g fresh shrimp peeled and deveined
  • 20 g galangal root sliced
  • 150 ml coconut milk full fat
  • 1 piece lemongrass stalk bruised
  • 3 piece lime leaves torn
  • 200 ml chicken broth low sodium
  • 50 g mushrooms sliced
  • 1 piece red chili sliced
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice fresh
  • 1 piece garlic clove minced
  • 5 g fresh cilantro chopped
  • 1 teaspoon sugar white
  • 100 ml water

Instructions

  1. Peel and devein the shrimp if not already done, then rinse under cold water and set aside.
  2. Slice the galangal root into thin pieces and bruise the lemongrass stalk by gently crushing it with the back of a knife.
  3. In a medium pot, add chicken broth, water, galangal slices, bruised lemongrass, and torn lime leaves. Bring to a boil over medium heat.
  4. Reduce heat to low and simmer the broth for 10 minutes to infuse flavors.
  5. Add sliced mushrooms, minced garlic, and sliced red chili to the broth. Simmer for another 5 minutes.
  6. For in the coconut milk and stir gently to combine. Heat through but do not boil to prevent curdling.
  7. Add the shrimp to the soup and cook until they turn pink and opaque, about 3-4 minutes.
  8. Season the soup with fish sauce, lime juice, and sugar. Stir well and adjust seasoning to taste.
  9. Remove the pot from heat and discard the galangal slices, lemongrass stalk, and lime leaves.
  10. Ladle the soup into a bowl and garnish with chopped fresh cilantro before serving.

  • Use fresh galangal root for best flavor; dried or powdered will alter the taste.
  • Do not boil the soup after adding coconut milk to avoid curdling.
  • Adjust chili amount to your preferred spice level.
