Instructions
- Peel and devein the shrimp if not already done, then rinse under cold water and set aside.
- Slice the galangal root into thin pieces and bruise the lemongrass stalk by gently crushing it with the back of a knife.
- In a medium pot, add chicken broth, water, galangal slices, bruised lemongrass, and torn lime leaves. Bring to a boil over medium heat.
- Reduce heat to low and simmer the broth for 10 minutes to infuse flavors.
- Add sliced mushrooms, minced garlic, and sliced red chili to the broth. Simmer for another 5 minutes.
- For in the coconut milk and stir gently to combine. Heat through but do not boil to prevent curdling.
- Add the shrimp to the soup and cook until they turn pink and opaque, about 3-4 minutes.
- Season the soup with fish sauce, lime juice, and sugar. Stir well and adjust seasoning to taste.
- Remove the pot from heat and discard the galangal slices, lemongrass stalk, and lime leaves.
- Ladle the soup into a bowl and garnish with chopped fresh cilantro before serving.
Tips
