  • 120 g raw shrimp peeled and deveined
  • 50 g fresh baby spinach leaves
  • 70 g ripe mango diced
  • 40 g red bell pepper thinly sliced
  • 30 ml fresh orange juice
  • 15 ml fresh lime juice
  • 10 ml extra virgin olive oil
  • 5 ml honey
  • 1 piece garlic clove minced
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Rinse the raw shrimp under cold water and pat dry with paper towels.
  2. Heat a nonstick skillet over medium heat and add 5 ml of olive oil.
  3. Add the minced garlic clove to the skillet and cook for 30 seconds until fragrant.
  4. Add the shrimp to the skillet and cook for 2-3 minutes on each side until pink and opaque.
  5. Remove the shrimp from the skillet and set aside to cool slightly.
  6. In a small bowl, whisk together fresh orange juice, fresh lime juice, honey, remaining olive oil, salt, and ground black pepper to make the citrus dressing.
  7. Rinse and dry the fresh baby spinach leaves thoroughly.
  8. Dice the ripe mango and thinly slice the red bell pepper.
  9. In a large salad bowl, combine the baby spinach, diced mango, and sliced red bell pepper.
  10. Add the cooked shrimp to the salad bowl.
  11. For the fresh citrus dressing over the salad ingredients.
  12. Gently toss all ingredients together until evenly coated with the dressing.
  13. Serve the tropical shrimp and spinach salad immediately for best freshness.
