  • 150 g skinless chicken breast strips
  • 30 g raw almonds chopped
  • 15 ml honey
  • 150 g zucchini medium sliced
  • 10 ml olive oil extra virgin
  • 1 piece garlic clove minced
  • 10 ml lemon juice fresh
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Slice the zucchini into thin rounds and set aside.
  2. Heat 5 ml olive oil in a non-stick pan over medium heat.
  3. Add the sliced zucchini to the pan and cook for 5 minutes, stirring occasionally, until tender. Remove from pan and keep warm.
  4. In a bowl, mix honey, lemon juice, minced garlic, salt, and black pepper.
  5. Add the chicken breast strips to the bowl and coat them well with the honey mixture.
  6. Heat the remaining 5 ml olive oil in the same pan over medium-high heat.
  7. Add the chicken strips to the pan and cook for 4-5 minutes on each side until golden and cooked through.
  8. Add the chopped almonds to the pan during the last 2 minutes of cooking and stir to toast them lightly.
  9. Place the cooked zucchini on a serving plate as a bed.
  10. Arrange the honey almond chicken strips on top of the zucchini bed.
  11. Drizzle any remaining sauce from the pan over the chicken and zucchini.
  12. Serve immediately while hot.
