- 150 g skinless chicken breast strips
- 30 g raw almonds chopped
- 15 ml honey
- 150 g zucchini medium sliced
- 10 ml olive oil extra virgin
- 1 piece garlic clove minced
- 10 ml lemon juice fresh
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Slice the zucchini into thin rounds and set aside.
- Heat 5 ml olive oil in a non-stick pan over medium heat.
- Add the sliced zucchini to the pan and cook for 5 minutes, stirring occasionally, until tender. Remove from pan and keep warm.
- In a bowl, mix honey, lemon juice, minced garlic, salt, and black pepper.
- Add the chicken breast strips to the bowl and coat them well with the honey mixture.
- Heat the remaining 5 ml olive oil in the same pan over medium-high heat.
- Add the chicken strips to the pan and cook for 4-5 minutes on each side until golden and cooked through.
- Add the chopped almonds to the pan during the last 2 minutes of cooking and stir to toast them lightly.
- Place the cooked zucchini on a serving plate as a bed.
- Arrange the honey almond chicken strips on top of the zucchini bed.
- Drizzle any remaining sauce from the pan over the chicken and zucchini.
- Serve immediately while hot.
