  • 100 g all-purpose flour
  • 50 g unsalted butter chilled and cubed
  • 20 g granulated sugar
  • 20 ml cold water
  • 60 g dried apricots chopped
  • 1 piece large egg beaten
  • 30 g ground almonds
  • 10 ml honey
  • 0.5 teaspoon vanilla extract

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. In a mixing bowl, combine all-purpose flour and granulated sugar.
  3. Add chilled unsalted butter cubes to the flour mixture and rub with fingertips until it resembles coarse crumbs.
  4. Add cold water gradually and mix until dough forms a ball.
  5. Wrap dough in plastic wrap and chill in refrigerator for 30 minutes.
  6. Roll out chilled dough on a lightly floured surface to fit a 20 cm tart pan.
  7. Place rolled dough into tart pan and trim excess edges.
  8. Prick the base of the dough with a fork to prevent bubbling.
  9. In a separate bowl, mix beaten egg, ground almonds, honey, and vanilla extract until smooth.
  10. Fold chopped dried apricots into the almond mixture.
  11. For the apricot filling evenly over the tart base.
  12. Bake tart in preheated oven for 30 to 35 minutes until golden and set.
  13. Remove tart from oven and allow to cool before serving.
