- 30 g unsalted butter
- 25 g granulated sugar
- 2 piece egg yolk large
- 2 piece egg white large
- 15 ml strong brewed coffee cooled
- 0.5 teaspoon vanilla extract pure
- 1 pinch pinch salt

- Chop the dark chocolate into small pieces and set aside.
- Melt the unsalted butter and chopped dark chocolate together in a heatproof bowl over simmering water, stirring until smooth.
- In a separate bowl, whisk the egg yolks with half the granulated sugar until pale and creamy.
- Add the cooled strong brewed coffee and vanilla extract to the egg yolk mixture and mix well.
- Gradually add the melted chocolate and butter mixture to the egg yolk mixture, stirring continuously to combine.
- In a clean bowl, whisk the egg whites with a pinch of salt until soft peaks form.
- Gradually add the remaining granulated sugar to the egg whites and continue whisking until stiff peaks form.
- Gently fold one third of the egg whites into the chocolate mixture to lighten it.
- Carefully fold in the remaining egg whites until fully incorporated, keeping the mixture airy.
- For the mixture into a lined mold or individual serving cups and smooth the top.
- Cover and refrigerate for at least 4 hours or until firm.
- To serve, unmold the marquise onto a plate and optionally dust with cocoa powder or garnish with coffee beans.
