- 200 g veal shoulder diced
- 50 g carrot peeled sliced
- 30 g spring onion chopped
- 40 g green peas fresh
- 100 g new potato peeled quartered
- 1 piece garlic clove minced
- 1 tablespoon olive oil extra virgin
- 50 ml dry white wine
- 150 ml low sodium chicken stock
- 1 piece fresh thyme sprig
- 5 g fresh parsley chopped
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Heat olive oil in a heavy-bottomed pot over medium heat.
- Add diced veal shoulder and brown on all sides, about 5 minutes.
- Remove veal and set aside on a plate.
- Add minced garlic and chopped spring onion to the pot and cook for 2 minutes until fragrant.
- For in dry white wine and simmer for 3 minutes to reduce slightly.
- Return veal to the pot and add low sodium chicken stock and fresh thyme sprig.
- Bring to a boil, then reduce heat to low and cover, simmering gently for 45 minutes.
- Add peeled sliced carrot, quartered new potato, and fresh green peas to the pot.
- Cover and cook for an additional 20 minutes until vegetables are tender and veal is very tender.
- Season with salt and ground black pepper to taste.
- Remove thyme sprig and stir in chopped fresh parsley before serving.
