  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon chili powder
  • 0.25 teaspoon salt
  • 0.1 teaspoon black pepper ground
  • 1 piece flour tortilla 8 inch
  • 1 teaspoon fresh lime juice

  1. Wash and slice the red, yellow, and green bell peppers into thin strips.
  2. Peel and slice the medium onion into thin strips.
  3. Peel and mince the garlic clove finely.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Add the sliced onions to the skillet and cook for 3 minutes until they start to soften.
  6. Add the minced garlic and cook for 1 minute until fragrant, stirring frequently.
  7. Add the sliced bell peppers to the skillet and stir well to combine.
  8. Sprinkle the ground cumin, smoked paprika, chili powder, salt, and ground black pepper over the vegetables.
  9. Cook the vegetables for 7-8 minutes, stirring occasionally, until they are tender but still slightly crisp.
  10. Warm the flour tortilla in a separate dry skillet or microwave for 20 seconds until soft and pliable.
  11. Remove the skillet from heat and squeeze fresh lime juice over the cooked vegetables, stirring to combine.
  12. Place the cooked veggie mixture onto the warm tortilla and fold or roll to serve.
