- 150 g zucchini medium sliced
- 50 g red bell pepper diced
- 40 g carrot medium julienned
- 1 piece garlic clove minced
- 5 g fresh ginger minced
- 1 tablespoon vegetable oil
- 1 tablespoon rice vinegar
- 1 tablespoon brown sugar
- 1 tablespoon soy sauce low sodium
- 0.5 teaspoon chili flakes
- 0.5 teaspoon cornstarch
- 30 ml water

- Wash and slice the zucchini into medium-thick rounds.
- Dice the red bell pepper into small pieces.
- Julienne the carrot into thin strips.
- Mince one garlic clove finely.
- Mince fresh ginger to get about 5 grams.
- Heat one tablespoon of vegetable oil in a wok or large skillet over medium heat.
- Add minced garlic and ginger to the hot oil and stir fry for 30 seconds until fragrant.
- Add sliced zucchini, diced red bell pepper, and julienned carrot to the wok.
- Stir fry the vegetables for about 4 minutes until they start to soften but remain crisp.
- In a small bowl, mix rice vinegar, brown sugar, soy sauce, chili flakes, cornstarch, and water until smooth.
- For the sauce mixture over the vegetables in the wok.
- Stir continuously for 2 minutes until the sauce thickens and coats the vegetables evenly.
- Remove from heat and serve immediately.
