  • 50 g light brown sugar packed
  • 30 ml light corn syrup
  • 1 teaspoon pure vanilla extract
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt fine

  1. Preheat oven to 120 degrees Celsius (250 degrees Fahrenheit).
  2. Pop the popcorn kernels using an air popper or stovetop method without oil or butter. Remove any unpopped kernels.
  3. In a medium saucepan, melt the unsalted butter over medium heat.
  4. Add the light brown sugar, light corn syrup, and fine salt to the melted butter. Stir continuously until the mixture comes to a boil.
  5. Allow the mixture to boil without stirring for 4 to 5 minutes until it reaches a caramel color.
  6. Remove the saucepan from heat and stir in the pure vanilla extract and baking soda. The mixture will bubble up.
  7. Immediately For the caramel sauce over the popped popcorn in a large mixing bowl.
  8. Use a spatula to gently toss and coat the popcorn evenly with the caramel sauce.
  9. Spread the coated popcorn onto a large baking sheet lined with parchment paper in an even layer.
  10. Bake in the preheated oven for 45 minutes, stirring every 15 minutes to ensure even coating and prevent burning.
  11. Remove from oven and let the caramel corn cool completely on the baking sheet before breaking into pieces and serving.
